Anything referring to sections is old hat. Up to Joomla 1.5 you had to create sections and categories. That is no longer necessary. Nowadays you can store your articles in as many or as few categories as you want or need.
Why use categories? Strictly speaking you don't have to. You can store everything in the default 'uncategorized' category. However, you'll find out pretty quick that categories aren't there for the fun of it. It's much easier to find your articles if they are stored in specific categories rather than in one big 'uncategorized' category.
Just like it's much easier to find a file if you store it in the appropriate folder, rather than dump everything you've got into the same folder.
