Categories are just a method to organise your articles e.g. by common subject matter, you might have a dozen articles relating to say 1960's rock bands, and so you create a category called "60's Music". and put each article (say about each band) into that category.

Use of Categories is not required, but it is a handy way to organise your content. You could just have one category called "General" (instead of "uncategorized"), and put all articles in that.
Given you're asking about sections (mentioned in your question) are you using Joomla 3.x or 2.5.x? "Sections" are no longer used in the Joomla 3.x series.
What is the "module map" you refer to. Do you mean a menu?
