FYI: If you changed anything make sure you've documented it so you know which changes you made :-)..
Did you restore an old .htaccess file? If you did it might be simply a .htaccess error on why you're getting a 500 error now. Did you have an alternative backup of your website like from cpanel or tar like backup?
Good idea to have different backups every time you update or install extensions. Good practice always pays off. Take snapshots of your structure and make sure all file, owner and permissions are correct.
Also might be an old ini file restored with invalid info. Be careful because restoring local joomla root ini files could cause issues as well such restoring old or outdated php.ini.
Also try firebug for firefox or chrome to find the 500 error issues, it might help a lot and check your apache logs or get the info from your hosting provider on all dates related to changes for errors.
