I currently have 3 active websites that are template based and were built by me using my hosting provider's system called RVSitebuilder. 
I'm a bit tired of the constraints and limitations of stock templates. I have installed Joomla! 3.1.5 via Softlicious installer in my hosting control panel.
I think I got a little ahead of myself and went searching for some snazzy template to use before had a grasp of what the heck I was doing. Now I've decided I need to really back up and start from ground zero.The problem is, I can't seem to undo what I've done. In other words, I can't get the Joomla! backend to remove that template and let me choose something else no matter what I do.
I've change the default template to something else but when I preview the site it hasn't changed. I've tried to delete any article I created, any menu items I created (it won't let me) etc. I've spent several evenings watching various tutorials, reading documentation and banging my head against the wall.
I suppose as my last fall back, I could simply uninstall and then reinstall Joomla! again on my domain. That should pretty much clear the decks. Essentially, taking this route would be a bit of a failure because I know I should be able to undo what I've done but I'm just not doing something properly. I really want to do this properly. I intend to rebuild all three of my websites using Joomla!. By the way, these are all my personal business websites. I'm a self-employed and this is a one-horse show and one of the ways I attract business. Help?
